We can't all, it varies by country and business. I get 5 weeks paid holiday, but I'm not allowed to use it all at once. France and Italy tend to take the whole of August off, other countries are more likely to have workers choose to split it into chunks. I go on a week long holiday and use the rest of my leave for long weekends and an extended break at xmas
